My brother Matt (third from left) hit the annual paddlefish migration on the Yellowstone River and snagged into this bad boy. I’ve never caught a paddlefish but I’ve eaten from Matt’s past catches. It’s a light colored flesh, and firm, not unlike swordfish or shark.
