For the Classic Burger:

3 parts game meat, chopped
1 part salted pork fat, cubed

Directions:

1. Mix 90% game meat with 10% cubed fat.

2. Grind or mince together, taking care that the meat and fat are both very cold, preferably recently out of the freezer.

3. Form into patties.

4. Cook to desired temperature in a hot pan, pressing and occasionally flipping the meat until done. Dress to taste.

For the Bacon Burger:

3 parts game meat, chopped
1 part bacon ends or thick-cut bacon, chopped

Directions:

1. Mix 75% game meat with 25% bacon ends.

2. Grind together, taking care that the meat and fat are both very cold, preferably recently out of the freezer.

3. Form into patties.

4. Cook to desired temperature in a hot pan, pressing and occasionally flipping the meat until done. Dress to taste.

For the Double-Fried French Fries

One pound potatoes
Fryer oil of choice
Salt to taste

Directions:

1. Cut potatoes into desired shape, then place in a bowl of water for twelve hours.

2. When ready to prepare, pre-heat deep fryer to 385 degrees.

3. Place in colander and toss the leftover starchy water. Then rinse in clean water and pat dry with paper towels.

4. Place in deep fryer for a few minutes until ends start to brown, then pull fries and strain oil off on paper towels.

5. Allow fryer to re-heat to 385, then place the fries back into the fryer until golden brown.

6. Season with salt, serve hot alongside burger.
