Steve shares one of his favorite recipes for preparing wild game — the blade roast. You can do a blade roast off caribou, moose, elk –any member of the deer family. It’s an important recipe because shoulder tends to be one of the most neglected and abused cuts of meat out there.

so right, front shoulder is a great piece but to me the front shanks and heart are the best. Great video. I think thats where most shows miss the mark. Most shows, you never see them cook the kill and that is where your show hits home with me. You said it so well in the first show that without the consumption the experience just isn’t complete.
I tried your simple recipe on a roast that I had in the freezer. Looking for something new to try with my meat. It was great. My family kept going on about how good this was, it just fell apart. Now they want me to make it again and take it a step further and turn it into some bar-b-Q.
